Cream honey is easy to make. The technology is based on mechanically stirring fresh liquid honey until it starts to crystallise. This destroys the large crystals in its structure. They are crushed and their viscosity is reduced. The result is an airy, white mass with a homogeneous structure resembling the consistency of sour cream or thick mayonnaise.
